This is what I had for lunch recently before going for a meeting. It is very simple, healthy and easy to prepare this meal.
Ingredients Preparation 1 bowl of brown rice 1 small size tofu - cut and sliced handful of anchovies and garlic chopped 1 stalk red chilli 2tsp of Moringa Powder 10 arugula leaves from my own garden Fried Rice Cooking Preheat the stove with medium fire A dash of sunflower oil into the stove Stir fry the anchovies and garlic (turn the fire down as it get burn easily) Next, add in the brown rice Continue stirring (press down the rice to avoid lumps) Some like the rice soft, others like it hard (so fry a little longer if you prefer hard) Next, add in the Moringa Powder , sprinkle over the rice Mix well with the rice and continue stirring for 30 seconds Ready to serve Tofu cooking Preheat the stove with medium fire Without adding oil, flip the tofu slice when it turn slightly brown Serve with fresh arugula leaves and red cut chilli Preparation time - 2 minutes Cooking time - 5 minutes There is an article on consuming too much white rice is bad for our body and the government is encouraging its people to switch to brown rice (read article here). It is encouraging to see most schools here are adopting this practice though the ratio of white to brown rice is still higher. I hope this simple recipe would encourage people to eat more healthily.
